Lemon Roasted Chicken

For our first recipe post, we wanted to feature a really fresh, simple, but impressive recipe that is a cinch to make! As we are into the fall season, we thought this recipe for Lemon Roasted Chicken would be perfect for a comforting meal that makes you ready to embrace the cooler temps.

Our Lemon Roasted Chicken Recipe-Serves 4
Ingredients


One Whole Chicken (about 4 lbs)
2 Lemons, quartered
½ Onion, quartered
Whole Garlic Cloves
3-5 sprigs of Fresh Thyme
2 Tablespoons of light butter spread
Salt, as needed
Pepper, as needed
Paprika, as needed
Garlic Powder, as needed

prep your chicken by adding fresh lemons, thyme, and paprika


Steps

Preheat oven to 350 degrees.
Rinse the chicken with cold water. 
Pat dry with paper towels.
Put chicken in small roasting pan.
Stuff the cavity of the chicken with half the lemons, half the onion, garlic cloves, and sprigs of thyme.
Rub the outside skin with the butter spread, then season with salt, pepper, paprika, and garlic powder.
Put rest of lemons and onions around the chicken in the bottom of the pan.
Bake until skin is golden brown and the chicken reaches an internal temperature of 165 degrees.

This is a delicious chicken recipe that is super easy to make! Since it's made with light and fresh ingredients, a small amount of salt and butter, it is very healthy and filling! The lemon and thyme added great flavor, while the paprika added a little something extra. Garnish with the leftover thyme springs and lemon wedges, serve with your favorite sides, and enjoy!
