Butternut Squash Ravioli

One of the great things about getting into fall is all of the delicious, healthy winter squash that are available during this season.  One of my absolute favorites is butternut squash.  You can do so much with it; make dessert, make soup, roast it, and even use it as filling for ravioli!

We went shopping at Whole Foods this past weekend, and let me say if you have never been you need to go.  We decided to pick up something easy and healthy for dinner:

These raviolis are DELICIOUS!  I am obsessed.  This product is vegan, vegetarian, and organic.  For a 1/2 cup it is only 220 calories. 

When making pasta, I always like to throw in a green with the pasta to make it seem like I have more pasta then I actually do.  We cooked our ravioli with broccoli and it was fantastic!  You can also toss the raviolis and broccoli in a healthy cream sauce, if desired.  Pair this meal with an Italian style salad and you have yourself one healthy meal. 




After our healthy dinner, we decided a bike ride was the perfect way to end our night.  Going on a light bike ride after eating is the perfect way to remain active and feel good after eating a hearty meal.
