Healthy Side Idea: Kicked Up Veggies

You've heard it over and over again...eat your vegetables! It's so true though! But eating plain veggies day after day gets boring. That's why we like to play around and create delicious recipes that make healthy eating fun and exciting! This recipe for our kicked up Green Beans and Bell Peppers is the perfect addition to any weeknight dinner. Pair it with your favorite lean entree like one of our favorites, Pesto Salmon! BTW, green beans and bell peppers is an amazing combo.

Kicked up Green Beans and Bell Peppers

8oz. Green Beans, washed and snapped
1 bell pepper, julienned
1TBsp olive oil or coconut oil
1Tsps minced garlic
1/4 c orange juice (try to find organic or no sugar added oj)
1 Tsps Chili powder
Salt
Pepper



1. Wash and prepare the veggies. Steam peppers and beans together in a steamer bag until tender. Set aside.

2. Heat a large skillet over medium-high heat. Add olive or coconut oil and minced garlic. Sauté garlic until fragrant.

3. Add steamed veggies to skillet and stir. Add salt and pepper to taste.

4. Add orange juice and bring to a simmer.

5. Once the OJ is absorbed, add the chili powder. Stir to evenly to coat.

6. Serve warm and enjoy!



This recipe can really work with whatever your favorite vegetables are. If you aren't sold on the spiciness of the chili powder, just use half a teaspoon and add to taste. You can also swap the green beans for an onion to create easy fajita veggies! Now you have a simple way to whip up a healthy side to go along with any dinner!
