Healthy Dinner Option: "Not Your Average" Gumbo

OMG... we have the perfect comfort food recipe for you without the added "comfort" if you know what we mean ;)

During the colder nights, I think we all want to snuggle up with a blanket by the fireplace and eat something warm and filling.  However, filling doesn't have to mean fattening and it doesn't have to mean lack of flavor.  To me, during the cold nights, a pot of gumbo always sounds so yummy with the rice and the warming stew.  Growing up in the south, this girl loves her some good southern food... that's for sure. 


When making this gumbo recipe I wanted to make sure it was full of flavor but as healthy as possible.  The addition of sweet potatoes may seem strange, but it gives it a sweet twist that is just a delight!

"Not Your Average" Gumbo

serves 4

3 tablespoons coconut oil

3 tablespoons flour
1 onion, medium dice
1 green bell pepper, medium dice
1 small sweet potato, medium dice
1 tomato, medium dice
2 teaspoons chopped garlic
2 cups hot chicken stock (we used low sodium)
1 tablespoon salt
1 teaspoon black pepper
1/2 teaspoon thyme
1/4 teaspoon cayenne pepper
1/4 teaspoon ground red pepper
1/4 teaspoon dried parsley
1/4 teaspoon old bay seasoning
2 bay leaves
shrimp, deveined and peeled
chicken sausage, sliced (we used the aidells chicken & apple sausage)
prepared quinoa or brown rice


1. In a large saucepot, melt the coconut oil and whisk the flour in cooking over medium heat until the "roux" is a light peanut butter color.



2. Add the diced onion, bell pepper, sweet potato, and garlic until onions begin to turn translucent. 
3. Add in hot chicken stock, stir.

4. Add in all the spices and tomatoes. Stir. Turn down heat, cover, and let simmer for about 30 minutes.
5. Add prepared shrimp and sausage and cook for about 15 more minutes.
6. While the gumbo is cooking, I separately prepared quinoa.  This was to act as my rice. You can also use brown rice, if preferred, for a healthy option. 
7. Spoon portion of quinoa or rice into bottom of bowl and when gumbo is ready spoon portion on top of rice.  Now you have a delicious filling meal!
